Delicious Cookies

Yes, that is really the name of these!  It's very fitting.  I promise.


1 cup butter, softened
3/4 cup oil (I use light olive oil)
1 cup brown sugar
1 cup white sugar
1 egg
2 teaspoons vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup quick oats
1 cup coconut
1 cup Rice Crispies (or any off brand you have)
1 1/2 cups milk chocolate chips

Preheat oven to 350 degrees F.  Blend butter and oil.  Add sugars, egg & vanilla, beating well.  Sift together flour, salt, baking soda and cream of tartar & mix into above.  Lastly, stir in oatmeal, coconut, Rice Crispies and chocolate chips.  Make balls and press down slightly.  Put on a lightly greased cookie sheet and bake 12 minutes.

Baked Spaghetti

12 oz. spaghetti noodles
1 cup chopped onions
1 pound lean ground beef
1 (16 ounce) can diced tomatoes
1 (4.5 ounce) can mushrooms, drained
1 teaspoon dried oregano
2 cups shredded mild Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
1/4 cup water

Bring a large pot of water to a boil.  Add spaghetti and cook for 8 to 10 minutes, or until al dente.  Drain and set aside.

In a large skillet over medium-high heat, saute the onions and ground beef.  Once beef is brown and onions softened, add the tomatoes, mushrooms and oregano.  Simmer uncovered for 10 minutes.

Preheat oven to 350 degrees F (175 degrees C).  Grease a 9x13 inch baking dish.  Place half of the cooked spaghetti into the prepared dish.  Top with half of the meat mixture.  Sprinkle with 1 cup of the mild Cheddar cheese.  Repeat.  In a medium bowl, mix together cream of mushroom soup and water until smooth; pour over casserole.

Bake in preheated oven for 30 to 35 minutes.  Let stand 10 minutes before serving.

Yield:  8 to 12 servings.
